Now, in winter, perhaps because of the cold, red wine is easier to drink than white wine, and I find myself reaching for it often. This time, I paired red wine with a light, Japanese-style pasta, which is the complete opposite of the recommended combination, but it was surprisingly delicious, so I'd like to share it with you♪
"Caldora Montepulciano d'Abruzzo 2012" Italian Red Wine, 1,260 yen
Alberto Antonini, the producer of this wine, is one of the world's most skilled winemakers. In Italy, he has produced wines from his own winery, "Poggiotondo," as well as Caldora, and in other countries, Altos Las Hormigas (Argentina) and Concha y Toro (Chile), among others, creating many of the world's most cost-effective producers. In the past, he supported Antinori during its heyday and was involved with Testamatta at Bibi Graetz, playing a key role in producing many wines that took the world by storm. The daily wine he produces has a smooth mouthfeel, with mild tannins and acidity, making it approachable and incredibly cost-effective. It would ideally pair well with Bolognese or pizza!

"Crispy burdock root salad with yuzu miso mayonnaise dressing"
This is a simple salad where you lightly boil burdock root in salted water until it retains some texture, then mix it with homemade yuzu miso (made the other day), mayonnaise, and pepper, and place it on top of leafy greens (frill queen, arugula, red beet, and red ole). The mayonnaise sauce, infused with the aroma of yuzu, coats the burdock root beautifully, making it delicious!

"Japanese-style spaghetti with mackerel and maitake mushrooms"
I absolutely love pasta with oily fish like mackerel and saury, so I ordered it that way from my husband again this time (lol). I bought some delicious maitake mushrooms from Toretate Shokurabu in Fukuroi, so I'll be combining them with mackerel. First, I grill the mackerel with salt and flake the flesh, removing the bones. In the meantime, I sauté the maitake mushrooms, which I've flaked by hand, with garlic, and add the diagonally sliced garlic sprouts a little later (I use one Italian chili pepper). Making the sauce is crucial for pasta. I usually use yam to thicken the sauce, but this time I decided to try grating Jerusalem artichoke, which I also bought from Toretate Shokurabu, and use its stickiness. Since it's a Japanese-style pasta, I'm using Japanese dashi instead of bouillon, and I'm adjusting the flavor by adding a little anchovy and Weipa (Chinese seasoning) to give it richness. For this pasta, I'm using VIVA ITALIA spaghetti. It has a chewy texture similar to fresh pasta. After boiling for about 10 minutes, emulsify the sauce by mixing it well with the ingredients in the pan, and it's done. The oily fish and maitake mushroom pasta goes perfectly with wine thanks to the saltiness and the savory flavor of the maitake mushrooms. This week, we're planning a home party with a couple of friends, so we're both enjoying planning the dinner menu!
