「Sushi SoraThe person who has been appointed as the head chef of "[restaurant name]" is a sushi chef.Yuji ImaizumiMr. Miss.
He started his apprenticeship at a sushi restaurant in 1993.A veteran with over 20 years of experience. It's a person.
Mr. Imaizumi cherishes Japan's four seasons and strives to provide seasonal ingredients in their optimal state.
They say that even with the same ingredients, the cooking method changes depending on the season.

The first thing that catches your eye when you sit at the counter is the tray that is set out.Wrappings made from Japanese paper。
The wrapping is used when preserving kimonos.Tatou paperThey have adopted this approach.
I heard that the color of the wrapping changes according to the seasons.

"Beer"
When you order a bottle of beer, it's poured into a small, thin-walled glass.
It has a great taste and goes down smoothly.
This shop isWe have many customers from overseas. Therefore
Craftsmen and other service staffMany people can speak English. It seems so.
On this day too, there were foreign customers eating at the counter.
craftsmenExplain the joke in EnglishI was very impressed by what they were doing♪

"Blanched white cabbage (from Fukui Prefecture)"
Shiro-na is a type of Chinese cabbage belonging to the Brassicaceae family, a non-heading variety of Chinese cabbage.
White cabbageChinese cabbage and pickled greens have been improvedIt is a product that has been produced and is well known in markets in the Kansai region.
It's a very easy-to-use vegetable because it has absolutely no strong flavor.
Since it has been made in Osaka since the Edo period"Osaka Shirona"Also known as,
Because it was widely cultivated in the vicinity of Tenmabashi and Tenjinbashi in the early Meiji period."Temmanai"It is also known as
First, we'll enjoy a light and elegant dish of blanched Chinese cabbage simmered in dashi broth.

"Snap peas (from Ehime Prefecture), fruit tomatoes (from Shizuoka Prefecture)"
I heard that these fruit tomatoes are from Shizuoka Prefecture.
Probably a favorite of hotels and famous chefs.Ameera TomatoI think so.
AmeeraReduce watering, regular tomatoesIt matures at about 1/3 of its original size.It is cultivated using a unique technique.
Concentrated sweetnessThese tomatoes are delicious!
Also, the brightly colored and fresh snap peas
The pods are plump and firm, and the nuts are packed tightly inside. The natural sweetness of beansYou can enjoy it.
Both dishes taste even sweeter when you eat them with the salt provided!

The craftsmen will carefully explain each step of the process as they serve you.

The chefs are inspired by samurai, sporting a chic festival-style jacket and an apron modeled after hakama (traditional Japanese trousers), creating a classic, old-fashioned look.
The floor staff wore kimono-style dresses inspired by the sky, adorned with Nishijin obi sashes, creating the image of modest, traditional Japanese beauties.
The uniforms, which express Japanese tradition in a modern way, look especially stunning in this space!

Koshihikari rice from Niigata Prefecture*The photo is for illustrative purposes only.
The rice isOnly Koshihikari rice from Niigata Prefecture. They are using it.
Generally speaking, Koshihikari rice is considered unsuitable for sushi rice because its high moisture content makes it too sticky.
Even when used, it is often blended with hard rice varieties such as Akita Komachi.
Koshihikari rice that has been properly dried and managedTwo-year-old riceteeth,
The head chef has been searching for this for many years.Red vinegar

This is the result.

In March, small tuna from the Sea of Japan, such as those from Iki (Nagasaki), are the main catch.
Because they are caught in fixed nets, their flesh is soft and lacks firmness, so many of them tend to change color relatively quickly.
It lacks the sweetness of winter tuna from places like Oma,
The medium fatty tuna (chutoro) is relatively light, while the lean tuna (akami) often contains iron and acidity, allowing you to enjoy the unique aroma and acidity of spring tuna caught in nearby waters.
