Nagoya, Chikusa: "Matsujuan, a popular soba restaurant established in 1987, known for its freshly made soba noodles," offers tempura soba lunch.

Located in Chikusa, Nagoya, this long-established soba restaurant, founded in 1978 (Showa 53), is popular for its soba noodles made with 100% buckwheat flour and tempura.Shojuan"fart!

Stepping through the noren (curtain), you'll find antique soba cups, lacquerware, and hand-ground stone mills on display, making it a pleasure to sit on the waiting chairs and admire them.

The soba noodles are made from "Hitachi Akisoba" variety grown in Ibaraki Prefecture and milled in-house. The bonito flakes for the broth are directly sourced from Tsukiji Market, and the wasabi is the "Mazuma" variety from Shizuoka Prefecture. In addition to ingredients sourced from the market every morning, you can enjoy seasonal ingredients delivered directly from producers all over Japan.

The restaurant has a substantial setup with 20 table seats and 20 tatami-mat seats, for a total of 40 seats.

We even have a single seat set up in the corner. Since it's by the window, you can enjoy a soba noodle meal alone while looking out at the green-lined street.

This popular restaurant is often full even during weekday lunchtimes, and there are days when the line never ends. Because soba noodles are prepared quickly, the restaurant is so busy that it serves up several tables during lunchtime!

On this day, I met with fellow car enthusiasts from Nagoya.onde Co., Ltd.He served as the representative of the company, which has over 100 stores nationwide.MT SalonThey are developing "Masateru MatsunamiI had a soba noodle lunch meeting with [Name] after a long time apart!

"Bamboo Tempura Zaru Soba (with small shrimp and vegetable tempura)" ¥1,800

The thin batter makes a delightful crunching sound when you bite into it, and there are three plump, springy, and sweet shrimp inside. The vegetable tempura includes eggplant, shiitake mushrooms, green beans, and sweet potato.

Here, you can choose from three types of soba noodles: "Kikouchi," "Sarashina," and "Futouchi," which are available year-round. Among these, "Kikouchi," made solely from buckwheat flour without any binders like wheat flour, is particularly popular. This is the name for 100% buckwheat soba noodles that has been used since the Edo period. Of course, I ordered the "Kikouchi." Occasionally, they also make seasonal "special soba" noodles. The Kikouchi soba noodles are made using whole buckwheat groats from "Hitachi Aki Soba," directly delivered from a buckwheat farmer in Ibaraki Prefecture, which are milled in-house using a stone mill. Made only with water and buckwheat flour without any binders, the Kikouchi soba noodles offer a richer aroma and flavor of buckwheat, and have an excellent texture! They are also easy to digest, so you won't feel bloated. The soba dipping sauce has a deep flavor with the aroma of bonito broth, and is slightly sweet, as is typical of Nagoya cuisine.

Pour in the thick, piping hot soba broth and take a moment to relax.

"Buckwheat porridge zenzai (hot, smooth red bean paste)" ¥550

The sweet treat is a moment of bliss, with carefully prepared, smooth-textured buckwheat dumplings perfectly complemented by piping hot strained bean paste. Finely chopped salted kelp is served on a separate plate, allowing you to enjoy a delightful balance of sweet and salty flavors, and the meal concludes with a comforting cup of tea.

Enjoying a leisurely lunch at a popular soba restaurant in Nagoya. It's been quite a while since my last visit due to the pandemic, but it was great to see Mr. Matsunami looking so well!
