The owner, Masato Omori, meticulously prepares freshly made soba noodles using hand-ground flour.
This restaurant serves delicious tempura that is crispy and lightly flavored, carefully fried by the owner's wife, Saeko.
If I'm looking for handmade soba noodles in Hamamatsu, I always go to this restaurant.
As usual, let's sit down at the counter and enjoy a delicious bowl of soba noodles while chatting with Mr. and Mrs. Omori♪

The restaurant is small and cozy, with a tatami room that can seat about 10 people and a counter that can seat about 4.
The high ceilings and the warmth of the wood create a space where time seems to slow down.
The sight of regulars gathered around the single-piece table is a familiar one,
Occasionally, you can see a few first-time visitors who have heard rumors and made the effort to travel from far away.
This restaurant is very popular among soba lovers!

"Taste Comparison" 1,200 yen

The tasting set allows you to compare two types of soba noodles at once: steamed soba and country-style soba made with whole buckwheat flour.
The steamed oysters in the foreground, with the skin removed, are a local variety from Fukui Prefecture. They are a pale green color, have a sweet taste, and are very delicious.
The soba noodles in the back are made with whole-grain flour and use Hitachi Aki soba.
This one is made with whole-grain flour, so you can really taste the rich flavor of the buckwheat.
You can enjoy a different flavor by adding salt!

Steamed rice (a native variety from Fukui Prefecture)

These thin, glossy noodles, made with hand-ground stone milling, offer the rich aroma and flavor of authentic buckwheat.
First, enjoy the aroma without dipping it in the broth.

Whole-ground buckwheat (Hitachi Aki buckwheat from Ibaraki Prefecture)

This is a smooth, dark soba noodle made from carefully hand-ground buckwheat with the hull intact.
Compared to soba served in a steamer basket, this soba has a stronger, more distinctive aroma and a richer flavor, which intensifies with each bite.
You'll be able to fully appreciate its sweetness by enjoying it with salt!

"Yamakake (cold)" 1,200 yen

Here are some of our most popular menu items in early summer!
The yam used in the yam stew comes from Yamagata Village in Nagano Prefecture.
We grate the yam for each order, stir it well in a mortar to incorporate air, and then place it on top of the soba noodles.
The yams from Yamagata Village have a prominent sweetness and a strong sticky texture that clings well to the soba noodles, making them delicious and easy to slurp down.
I loveMr. and Mrs. OmoriOur usual routine is to relax after the meal, enjoy a leisurely chat, and have some tea.
Please enjoy the soba noodles, lovingly prepared by this husband and wife team!
