The beef is wet-aged for approximately 21 days to ensure it is in its best condition. The steaks are cooked over embers using four types of firewood: oak, sawtooth oak, Japanese oak, and cork oak, a cooking method that brings out the best in the ingredients. Enjoy watching the chefs expertly grill the steaks in the glass-enclosed grilling area visible from the main dining room!

This time, we tried their recommended "Prime Tenderloin with Black Truffle Sauce," which is rich and flavorful and infused with the aroma of black truffles; the "Prime Filet Mignon," which is thick yet moist and tender; and the "Prime Ribeye," which is soft and juicy!
Each main dish comes with a choice of side dish: steamed vegetables and baked potato, garlic mashed potatoes, or rice!
The "Prime Filet Mignon" was served on a plate from Gaku Shaku's "âge series," and the generously thick filet was paired with this roughly carved plate that evokes the power of the earth, creating a truly impressive sight!
Five types of steak sauces are available: a "Japanese-style sauce" based on ponzu sauce using Sasayama onions and apple juice, a "roasted garlic demi-glace sauce," a "salt wasabi" sauce made with real wasabi and rock salt, "black truffle salt," and "Tasmanian grain mustard." You can enjoy changing the flavor to your liking! However, it's best to try it plain first to enjoy the original taste of the meat.
For the red wine to go with the steak, we chose a wine from our favorite winery in Napa Valley, California.Kenzo EstateI received "rindo (purple bell)" from [the company/brand]. It features aromas of dark fruit and fine tannins, offering a deep and supple flavor♪
