Hamamatsu's leading patisserieAbondance"ofBernard HeberleWe hosted a home party at our house, serving Thai food to Bernard Eberle and his wife, Toyoka Hasegawa!
On this trip to Bangkok, I stayed at a first-class hotelThe SiamHaving revisited the cooking school at "The Siam," my Thai cooking repertoire has expanded, so I'll recreate some dishes at home for these two internationally-minded individuals who love traveling abroad to try!
Fresh lemongrass, kaffir lime leaves, and galangal, essential ingredients for Thai cuisine, aren't usually sold in regular supermarkets. So, this time, I was able to make it thanks to Niparat, the owner chef of my favorite Thai restaurant in Hatsuse-cho, Rattana Thai Restaurant! Thank you so much!
When hosting home parties, I try my best to ask guests about their likes and dislikes before cooking, but actually, Bernard's least favorite ingredient is "all kinds of onions," which is quite a problem!
Most Thai dishes include onions or scallions, but this time we've cooked without using any onions at all, cleverly utilizing substitute ingredients!

① "Som Tum (ส้มตำ) Green Papaya Salad" × Dish:Gaku Shakunaga mars himawari Φ250
I'll be buying Hamamatsu-grown green papayas from Takemura Horticulture in Nishikamoe-cho, a town near my home, and making my own version of Som Tum, a classic Thai salad!
This simple salad is made by julienning not only green papaya, but also apples and red radishes, which are in season in Japan, and mixing them with mini tomatoes from Kaneko Farm in Mikatahara town and black edamame from Tamba Sasayama that have been blanched and frozen, all dressed in a sweet and spicy sauce!
Unripe green papayas are rich in enzymes that break down fats, carbohydrates, and proteins, and are known to be packed with nutrients such as vitamins, minerals, dietary fiber, and polyphenols!
The enzymes in papaya are effective for maintaining health, such as relieving fatigue and promoting digestion, and also offer beauty benefits, making it a must-have salad for women going through menopause! (lol)

② "Pad Krapow Moo (ผัดกระเพราหมู) Stir-fried minced pork with holy basil" × Dish:Gaku Shakunaga Reversible Petri Dish Φ250
A classic Thai dish: ground pork stir-fried with basil!
”"Pad" means stir-fry, "gapao" means holy basil, and "moo" means pork, so "Pad Gapao Moo" is made up of these. However, minced chicken is "Pad Gapao Gai," squid is "Pad Gapao Pla Muek," and shrimp is "Pad Gapao Kung"!
This time, I've used shiitake mushrooms instead of onions to enhance the aroma and flavor, and added green bell peppers and red and yellow paprika for color!
The aroma of the nam pla (fish sauce) drizzled on top at the end instantly transforms it into a Thai dish!
A fried egg with a crispy white and a runny yolk is a surefire hit!

③ "Gai Yang (ไก่ย่าง) Thai-style grilled chicken" × Dish:Gaku Shakunaga mars Φ250
Thai grilled chicken (Gai Yang) is made by marinating chicken wings in a seasoning mixture the day before, letting them rest in the refrigerator overnight, and then grilling them in a stone oven!
Squeezing some citrus fruit like lemon or lime over it will give it a refreshing taste!

④ "Tom Kha Gai (ต้มข่าไก่) Chicken Coconut Milk Soup" × Bowl:Gaku Shakunaga Thin bowl Φ240
This soup is one of Thailand's two most famous soups, second only to Tom Yum Goong. "Tom" means to boil, "Kha" means galangal, and "Gai" means chicken. It's a spicy and sour chicken soup in coconut milk!
This soup was taught to me at the cooking school of "The Siam," a top-class hotel in Bangkok!
I'm totally hooked on this soup, which is milder than Tom Yum Goong and has a refreshing aroma of herbs! Aroy!!
I will share the recipe in detail in future Bangkok articles, so please check them out if you'd like to try making it!

⑤ Pad Thai (ผัดไทย) Thai-style fried noodles × Dish:Gaku Shakunaga áge Φ320
Thai-style fried noodles, with their chewy, flat rice noodles and sweet and spicy sauce that coats them perfectly, are a classic Thai dish!
This is also a Pad Thai I learned at cooking school, so I'll share the recipe in my Bangkok article!

⑥ “Tom Yum Goong (ต้มยำกุ้ง)” × Vessel:Gaku Shakunaga gen thin bowl Φ22
”"Tom" means to boil, "Yum" means to mix, and "Kung" means shrimp, so it's "Tom Yum Kung"!
Thai cuisine, known for its spiciness, sourness, and complex aromas, is considered one of the world's three greatest soups!

⑦ "Mackerel and celery tomato curry" × Dish:Gaku Shakunaga gen thin bowl Φ230
This is a curry that the two of them enjoyed when we served it at our housewarming party last year, and it was requested again this time!
I learned the basics of Indian curry at "Takeout-only spice curry shop ammikkalEri Suganuma from "[Title of the show]!"
These days, when we talk about curry at home, it's almost always Indian curry!
This is an adapted recipe I created for Bernard, who hates onions. It doesn't use any onions at all, and instead uses celery to add sweetness and richness!
The combination of mackerel and tomato is excellent, making this curry a great choice even for those who don't like meat!
This time, when I went to Anmikkal to buy some fragrant spices, Eri-chan gave me several kinds of unusual chili peppers!
Fresh chili peppers have a strong spiciness and a wonderful aroma, making them an essential ingredient in Indian curry!
