As the second generation of Gloria Hotel Group, Fudy Chen has always been passionate about cooking.
He was accumulating experience in the Michelin stars restaurant after he graduated from the School of Hotel Administration at Cornell University.
He grew vegetables and tried to find the original taste and flavor in California organic farms.
Fudy Chen brought his extensive experience back to Taiwan and established restaurants.
He is now the culinary director of L'IDIOT RESTAURANT & BAR, TK SEAFOOD & STEAK, EAST END BAR,
and 333 RESTAURANT & BAR. Fudy Chen tries to do everything by himself, he even has an organic field in Taipei.
He plants and harvests vegetables in order to let customers experience a completely original taste.

We use homemade bucatini, which is slightly thicker than spaghetti, about 5-6mm in diameter, and has a hole in the center.
It's served with clam marinara sauce.
The bucatini was cooked perfectly al dente! (Amazing!)
This is quite unusual for Italian food in Taiwan, where soft textures are preferred! (Yay!)
The name "marinara" means "of the sailors" in Italian, and it originates from the fact that it was a dish commonly eaten by sailors in Naples, Italy.
A simple tomato sauce made with plenty of tomatoes and garlic, olive oil, oregano, etc.
The pasta has absorbed the clam broth perfectly, resulting in a delicious and flavorful dish!

We use a rare cut of beef, which is the top layer of American ribeye, and only enough for about 10 servings can be obtained from one cow.
In Japan, this part is called "kaburi".
The meat is softer than the fillet and closer to the fatty part of the ribeye, giving it a particularly distinctive flavor.
I told them I preferred lean meat with as little fat as possible, and they ordered this.
With its beautifully cooked rosé color, it's in perfect condition, and the moment you cut into it, you can already sense the deliciousness of the meat!
I never expected to find such delicious beef in Taiwan!
Two types of sauce were provided, but I think this meat should definitely be enjoyed simply with salt.
