The owner, Shiro Takakuwa, served us this as a complimentary snack while we waited for the hot pot to be ready.
The soba-gaki (buckwheat porridge) was incredibly flavorful and absolutely delicious! I'm sure it would go perfectly with sake!
Gokayama Tofu, a specialty of Gokayama, has a firm texture.
The rich flavor of soybeans spreads throughout your mouth! Adding salt doubles the sweetness!
The signature dish here is, without a doubt, the bear hot pot!
Bear stew, which is good for beauty and health, is bursting with sweetness and umami!
For the final course of this hot pot, which is based on broth made from bear paws, you absolutely must order the "rice porridge"!
Furthermore, I tried the rare "Hakubishin Nabe" (masked palm civet hot pot) for the first time! This dish also offers a delightful combination of tender, springy meat and concentrated flavor!
For those who love game meat, or those who mistakenly believe that bear stew isn't tasty, we highly recommend you try the flavors of "Takachiyo"!
The owner's engaging conversation is also one of the shop's selling points, and it adds a special touch to the delicious food!
