HSL: A cool restaurant that's the talk of the town in Salt Lake City

The restaurant recommended by Chris Erickson, the manager of The Grand America HotelHSL RestaurantI'll book an Uber and head there!

This is a sister restaurant to "Handle" in Park City, and was created by Executive Chef Briar Handly, who also founded Handle. It opened in Salt Lake City in April 2016 as "HSL"!

This American cuisine, featuring organic vegetables and carefully selected ingredients, has become a hot topic and is a very popular restaurant! We recommend making a reservation in advance.

The exterior has a simple and modern feel, while the interior is a cozy space unified by a green color scheme!
Upon telling the receptionist my reservation name, I was led to a waiting sofa before being seated at a table, as it was a little earlier than opening time!

Since the restaurant opens at 5 PM and stays light until after 8 PM due to daylight saving time, they don't even light candles on the tables, creating a daytime atmosphere during dinner time (lol).
First, to quench my thirst, I ordered a beer and some sparkling water.

For the food, we'll ask SARAH, the slim and kind waitress who was in charge of our table, for her recommendations!

Behind the marble bar counter is an open kitchen, creating a fantastic atmosphere where you can enjoy watching the cooking process! You can see the staff working energetically in their respective roles.

The salad is "SEEDED CRACKER (Grandma Britton's pepper jelly, cream cheese mousse, herb salad) 1 TP4 T6 (approximately 660 Japanese Yen)".

The crispy chips, generously coated in black sesame seeds, pair perfectly with the cream cheese and fresh vegetables, creating a great texture!

For the appetizer, I had "SMOKED PARSNIP “BARCON” (red beets, granny smith apple, pink peppercorn honey) 1 TP 4 T 15 (approximately 1,650 yen)".

Locally grown yellow carrots are roasted with the skin on, and served with beets, green apples, and pickled onions, accented with black sesame seeds and honey.

The yellow carrots have a fluffy texture and sweetness, almost like sweet potatoes, and the unexpected combination with the soft beets and crisp green apples is exquisite and delicious!

For the main course, I ordered the charcoal-grilled US beef "NY STRIP STEAK (with Zursun's heirloom bean salad and wild greens) $32 (approximately 3,520 yen)" cooked medium-rare!
A healthy baby leaf salad featuring several types of beans, along with carrot peel and pickles, is served with a vinegar dressing.

The aroma of charcoal grilling fills the air, and with each bite, the delicious flavor of US beef spreads throughout your mouth, and the moist, perfectly cooked meat is just right!

For dessert, I was very satisfied with the refreshing sour plum sorbet, "SORBET $3 (approximately 330 yen)".
Suddenly, a current-model "MASERATI Quattroporte," the same as our family's beloved car, appeared in front of the restaurant!
It appears to be the guest's car for the day!

The passenger was probably a distinguished-looking British gentleman with a hint of gray hair, accompanied by a very beautiful Caucasian woman!
In the vast United States, you see many more large vehicles like campervans and Jeeps compared to Japan, but did you know that there is actually a "MASERATI" dealer in Salt Lake City?

Enjoying delicious food and beer, I was absolutely thrilled to see the Maserati making its debut in America that night!
