Tofu-an Yamanaka began with the desire to "create tofu using the delicious water of the Isuzu River." Using the pure groundwater of the Isuzu River, soybeans suited to the water, and nigari (magnesium chloride), they offer tofu and tofu sweets that are gentle on the body. It is a popular shop that attracts many fans, not just health-conscious people!
The shop boasts its signature tofu, "Nigitae," and offers a wide variety of tofu-based sweets, including "Unohana Donuts," born from the kind thought that "it's a waste to throw away the okara" (soy pulp) left over from tofu making, as well as "Unohana Potatoes," "Unohana An Donuts," "Tofu Soft Serve," "Soy Milk," "Tofu Bavarois," and "Tofu Ice Cream."
