Shirasu (baby sardines) caught in Suruga Bay in Shizuoka Prefecture are famous for their small size. Among them, the smallest shirasu are carefully selected, frozen once, and then quickly boiled in hot water with a salt concentration similar to seawater to make "kamaage shirasu" (boiled shirasu). I absolutely love kamaage shirasu. This morning, I had kamaage shirasu and negitoro (minced tuna with green onions) in a bowl, drizzled with wasabi and soy sauce, and devoured it with a big bite.
