Shirasu (baby sardines) caught in Suruga Bay, Shizuoka Prefecture, are famous for their small size. Among these, the smallest shirasu are carefully selected, frozen once, and then quickly boiled in hot water with a salt concentration similar to seawater to create "kamaage shirasu" (boiled shirasu). I absolutely love this kamaage shirasu.
