Our own vineyard located in Woodside, Adelaide Hills, South Australia.
Primarily uses Chardonnay from M3 Vineyard.
The grapes, harvested by hand, are transported to the winery and then cooled.
The grapes are pressed whole, and the juice is fermented in small French oak barrels.
By partially using natural yeasts and performing lactic fermentation, they have succeeded in creating complex wines.
The citrus aroma is distinct, with notes of lemon peel and grapefruit.
It has a lively layer of acidity that maintains freshness and tightness, and it exudes a subtle and delicate flavor♪
